Paolo’s Story

“My love of pizza began with our annual trips to my father’s home of Sorrento, where my family spent our summers. There is nothing quite like Neapolitan Pizza for me, and I have always wanted to bring the authentic Neapolitan pizza experience to my home town of Derby.”

“Our business began with a Rice box trailer and a clay oven, which we hand-built in my garden. We began serving pizzas to the customers of Mr Grundy’s, from our Horse box trailer and there The Pizza Pony was born. Our customer’s enthusiasm led to us shipping a large hand-crafted clay oven from Italy, and creating a pizzeria space in the garden room at Mr Grundy’s to allow us to serve our pizzas all year round.”

“Ingredients are incredibly important to us, which is why we use only the highest quality. The holy trinity of Neapolitan pizza are flour, tomatoes and cheese. We use the highest standard Petra flour, San Marzano tomatoes and the highest quality Italian Mozzarella we can find, imported from Italy in order to create that authentic Neapolitan flavour.”

“We remain committed to offering the very best Neapolitan inspired food using the highest quality ingredients and the knowledge and skills of an expertly trained and experienced pizziaolo to ensure our pizzas taste just like the ones I ate in my summers in Sorrento. As for our Horse Box: it still remains part of our business today, taking our Neapolitan cuisine to events across Derbyshire.”
